With a mash bill of 45% wheat and 51% corn, this is a sweet, soft and very easy drinking Bourbon.
Aged a minimum of 3 years in virgin oak casks in order to retain the soft wheat character and to avoid over dominance from the wood.
Nose: Buttersctoch, caramelized banana and some oak.
Palate: A delicious toffee richness and creamy butterscotch. Peanut brittle, nugget and peach flavored hard candy.
Great for people looking to get in to whiskey.

While Bourbon must be distilled from a minimum of 51% corn, most also have some % of rye and malt.
Our High-Rye Bourbon has 36% rye, resulting in a little more spicy and peppery character while maintaining the sweet buttery taste associated with Bourbon.
Nose: Bright orange spice with some oak and vanilla. Yes, you could say coconut.
Palate: A soft sweet woody and toffee candy start, followed by some citrus, honey and gentle accidity.
A wonderful all rounder.

This is our high-rye Bourbon matured a minimum of 4 years in virgin oak barrels then finished with Aspen wood. The resul is a soft, smooth, fruity and easy drinking whiskey.
Nose: “Tutti Frutti”… bursting with tropical fruits. Apricote, passion fruit, banana and then oranges with creamy vanilla and sweet American oak.
Dangerously enticing.
Palate: Succulent peaches, juicy grapes and thick honeydew melon with a sweet citrus and slighty tart appricot finish.
Quite simply, Colorado in a bottle.

Rye whiskies present considerly more diversity in flavor compared to Bourbons, and our Hogback Rye Whiskey is no expection. Lighter than some Rye’s, our 95% rye is complex and enticing.
Nose: Floral and soft. Grassy and sweet, with plenty of green apple and some oak.
Palate: Green apple hard candies are most prevalent, with some tart cherry and flowery sweetness.
Lingering sweet orange spice finish.
Warming and deeply satisfying neat or as the base for a cocktail.

Made from 100% Scottish grown barley and malted using peat smoke from a peat bog just a few miles from where owner Graeme Wallace was born, this whisky is a truly personal endeavor.
Aged a minimum of 3 years in virgin oak casks in order to attain a wonderful harmony of peat and oak.
Nose: A perfect balance of smoke and oak with plenty of peat up front. Inviting and intriguing but not over powering
Palate: Sweetly glazed BBQ meat and smoked beef jerky, with some oak and vanilla. The addition of water opens peppery and briny notes, followed by blackberry and apple pie.
The American “Scotch”

Made from 100% malted barley from the Rhar Maltings in Minnesota, the grains are lightly kilned resulting in a roasted coffee character.
Aged a minimum of 3 years in virgin American oak casks in the high altitude and semi-arid climate of Colorado.
Nose: Chocolate dominates, followed by raisin and crisp green apple. A freshness synonymous with shaving cream. All together – Pina Colada.
Palate: Milk chocolate then creamy malted milk. Dark cherries, raisins, figs, dates, coffee and vanilla. Reminisce of a Highland Scotch.
Finish: Dates, prunes, banana and a malty bitter chocolate.

Our 95% rye whiskey is lighter than many other rye whiskies but still has all the characteristics associated with a rye. Eclipse is finished for two years in barrels that previously held rum.
Aged a minimum of 4 years in a virgin oak barrel and ex-rum cask.
Nose: A big beautiful nose – wood shavings, freshly cut pine. All the baking spices – nutmeg, cloves and cinnamon. And so much more…
Palate: Baked apple. Citris and sweet spice with a long creamy vanilla and a warming orange sorbet finish.
A cask strength whiskey, great at full proof or enjoyed with a splash of spring water.
Cask Strength abv
Enigma is a four grain, malt forward cask strength whiskey, blended from rye, barley, corn and wheat grains.
Blended from four different barrels ranging from 4 to 6 years old, allowing the characteristic of each grain to shine. Dark chocolate malt, peppery rye, toffee wheat and buttery corn.
Nose: A bold nose. Strong oak, followed by big chocolate spices, hazelnuts and an orange twist.
Palate: A symphony of bold and elegant flavors that come in waves. Silky-smooth dark chocolate, creamy caramel, black pepper and an orange rind tang. A rich toffee, lingering coffee and mocca finish.
Perfect with any cigar.
Cask Strength abv
Barrel #01 – Released 2021
This was the first release in the Wallace Collection and the very first barrel of Single Malt Whisky we filled. Distilled using 100% lightly kilned 2-row malted barley from the Rhar Maltings in Minnesota. Aged in a virgin American oak barrel for four years, then finished with the addition of Colorado aspen wood.
Nose: Hazelnuts and almonds, orange blossom and earthy with some pepperoni.
Palate: Dark chocolate, creme rule, brown sugar, and caramel apples. Followed by black cherry, sweet dates and strong tea with a lingering sweet black peppery finish.
This is a bold and powerful yet elegant and fresh malt whisky, with an overriding luscious creamy and buttery toffee fudge character.
The first ever malt whisky finished with aspen wood, resulting in a sweeter taste and thicker viscosity.

The first peated malt whisky in the Wallace Collection. Distilled using 100% peated malted barley from Scotland. Aged in an ex-Rye American oak barrel for four years, then finished for six months in a 2-year-old Cabernet Sauvignon red wine barrel from the Continuum Estate, Napa.
Nose: Irresistible blackcurrant and sweet peat. Phenolic, slightly briny and with a hint of herbal tea. Popcorn and butterscotch with water added.
Palate: Sweet wood. Waxy, syrupy and mellow. Thick and rich, salty, peaty with licorice tones. Long lasting, soft and peachy. So succulent, so deep, so elegant, oh so good.
Tastes like a 25-year-old Ardbeg. So balanced, so elegant, oh so good.

Distilled using lightly kilned 2-row malted barley from the Rhar Maltings in Minnesota. Matured in ex-Bourbon American oak barrel for 4 years, then finished for six months in a 4-year-old Cabernet Sauvignon red wine barrel from the Philip Togni Vineyard, Napa.
Nose: Wine notes followed by fresh wood shaving. Water opens up sweeter notes of vanilla, creamy chocolate, peaches and strawberries.
Palate: Soft, malty and waxy: sweeting up and revealing candy, peaches and oak. A lovely lingering peach wine finish, fading to toffee and chocolate.
A lovely pink hue and hint of wine throughtout making this an elegant single malt whisky to savor.

Distilled using 100% peated malted barley from Scotland. Matured in ex-Bourbon American oak barrel for four years, then finished for six months with Aspen wood from Colorado.
Nose: Medicinal and phenolic. Dank warehouse! Tropical fruits including ripe bananas and sweet fried plantation.
Palate: Sweet peat, honey, peaches and licorice with pencil shavings and lingering phenolic notes.
Probably the first ever peated single malt whisky finished with aspen wood. The result is a smooth, well rounded, fruity and lightly woody whisky..

Barrel #15 – Released 2023
The second release using a finishing barrel from the Continuum Estate. Distilled using 100% peated malted barley from Scotland. Matured in an ex-rye American oak barrel for four years, then finished for nine months in a Cabernet Sauvignon barrel from the Continuum Estate, Napa.
Nose: Lightly phenolic, pine, earthy and grassy. Slightly medicinal and salty.
Palate: Creamy, buttery and salted cashews. Then dark cherry chocolate moose. Lingering sweet peat and black cherries.
More of a Campbelltown than Islay whisky. lightly briny, subtle, buttery and slightly salty.

Distilled using lightly kilned 2-row malted barley from the Rhar Maltings in Minnesota. Matured in an ex-Bourbon American oak barrel for four years, then finished for twelve months in an 8-year-old Cabernet Sauvignon red wine barrel from the Philip Togni Vineyard, Napa.
Nose: Red wine and a strong sent of underbrush, then cherry becoming increasingly fruity and sweetness.
Palate: Bold and well structured. Chocolaty cherries upfront then blackberries, earthy and licorice.
Finish: Plumbs, red currents, figs, licorice and tobacco.
Distilled using 100% peated malted barley from Scotland. Matured in an ex-Wheated Bourbon American oak barrel for over five years.
Nose: Musky. Gentle salty, briny and eucalyptus. Some vanilla with hits of orange and honeycomb.
Palate: Sweet briny and earthy peat. Creamy orange chocolate with orange rind.
Finish: Orangeee then slight phenolic.

Distilled using 100% peated malted barley from Scotland. Matured in an ex-Bourbon American oak barrel for five years, then finished for six months in a Barbados Rum barrel.
Nose: Briny and slightly salty with hints of black tea, sawdust and shaving cream. Plus pineapple, pomegranate, butterscotch and delicate rum.
Palate: Candy pineapple then hints of vanilla cake and icing sugar. A rich waxy pleasant phenolic mouth-feel.
Finish: Coconut then chocolate orange… long lingering orange. Then raspberry, briny and salty.
Distilled using 100% peated malted barley from Scotland. Matured in an ex-Bourbon American oak barrel for four years, then finished for six months in a 4-year-old Cabernet Sauvignon red wine barrel from the Philip Togni Vineyard, Napa.
Nose: Banana toffee pudding. Peanut butter. Shaving cream. Salty & briny
Palate: Creamy, buttery (like Worthers candies). Thick and waxy. Sweet, salty & deep phenolic. Chewy.
Finish: Medicinal, sweet peat, toffee and cassis.
